What is a truffle hunt really like?

Most people imagine truffle hunting as simply walking through the woods until someone suddenly uncovers a truffle.

The reality is far more interesting.

Long before you arrive, you're stepping into a tradition that has shaped life in the Langhe for generations.

In Piedmont, truffle hunters are known as trifulau. For many of them, truffle hunting isn't simply something they do — it's part of their family history. They grew up listening to stories about the forest, learning to recognize the seasons, understanding the land and gradually developing knowledge that can't be learned from books.

Then there's the dog.

If you ask me, the most fascinating part isn't finding the truffle — it's watching the hunter and the dog work together.

The relationship between the hunter and the dog is something truly special. Years of working together create an extraordinary level of trust. The hunter understands every movement of the dog, while the dog searches with genuine excitement, following scents that we can't even begin to notice.

Once the dog picks up the scent, it begins digging with enthusiasm until the hunter asks it to stop. That's an important moment. The truffle is then carefully uncovered by hand, helping protect both the truffle itself and the delicate underground environment where it grows.

Today, truffle hunting in Italy is carried out exclusively with trained dogs. Pigs were traditionally used in some parts of Italy and other European countries, but their use is now prohibited by Italian law. Unlike pigs, a trained truffle dog works in partnership with the hunter, happily waiting for praise — and, of course, a well-earned treat.

A private truffle hunt usually lasts around an hour and a half, giving you plenty of time to enjoy the walk, learn about this remarkable tradition and experience the quiet beauty of the Langhe woods.

What nature offers always depends on the season.

At certain times of the year, the dog may find black truffles.

During the white truffle season, you might even be lucky enough to discover the legendary Tuber magnatum Pico.

Finding one can never be guaranteed.

And perhaps that's exactly what makes the moment so unforgettable.

The White Truffle of Alba

The White Truffle of Alba (Tuber magnatum Pico) is often described as the world's most precious truffle.

And after you've experienced its aroma for the first time, it's easy to understand why.

Its fragrance is unlike anything else — delicate, complex and instantly recognizable. Just a few thin slices over fresh pasta, risotto or eggs are enough to transform an entire dish.

Unlike many other truffle species, the White Truffle of Alba has never been successfully cultivated on a commercial scale.

Every truffle grows naturally.

Every season is different.

Every harvest depends entirely on nature.

Rainfall, temperatures and the size of the harvest all influence how many truffles the forest is willing to offer each year. As a result, prices can vary dramatically from one season to the next, and exceptional truffles may sell for well over €5,000 per kilogram.

But that's only a small part of the story.

What has always fascinated me is that, despite everything we know today, nature still refuses to reveal all of its secrets.

Perhaps that's exactly what makes the White Truffle of Alba so extraordinary.

Why does it grow here?

People often ask why the world's most celebrated white truffle grows in this part of Piedmont.

There isn't one simple answer.

Locals call these natural truffle-growing areas tartufaie. Each tartufaia has its own delicate balance of soil, humidity, biodiversity and trees such as oak, poplar, willow and linden. Even small changes in these conditions can make the difference between finding truffles and finding none at all.

Despite decades of scientific research, no one has managed to recreate this remarkable balance.

Perhaps that's one of the reasons the White Truffle of Alba continues to fascinate people from all over the world.

The man who introduced Alba to the world

White truffles have been part of life in the Langhe for centuries.

But one man helped transform them into an international symbol of Italian gastronomy.

His name was Giacomo Morra.

Beginning in the 1930s, he came up with an idea that was both simple and brilliant.

Every year, he selected the finest white truffle of the season and sent it as a gift to world leaders, artists and celebrities.

Among those who received one were Winston Churchill, Marilyn Monroe, Alfred Hitchcock, Sophia Loren, Pope Paul VI and many others.

Long before marketing became a profession, Morra understood something very simple: when you share something truly extraordinary, people become curious about where it comes from.

His vision helped turn Alba into an international destination and introduced the White Truffle of Alba to the world.

Even today, nearly a century later, his legacy continues every autumn as thousands of visitors travel to the Langhe hoping to experience this remarkable tradition for themselves.

White truffle season

The official White Truffle of Alba season generally runs from October through the end of January.

If you ask me when the Langhe is at its most magical, my answer will almost always be autumn.

The vineyards slowly turn shades of gold and crimson.

Morning mist settles over the hills.

Restaurants begin serving seasonal truffle menus.

The pace of life changes, and visitors arrive from all over the world to experience one of Italy's most celebrated culinary traditions.

Every season is different.

Some years nature is generous.

Others bring fewer truffles and higher prices.

That's part of the beauty of white truffles.

No two autumns are ever quite the same.

The Alba White Truffle Fair

Every autumn, Alba hosts one of Italy's most celebrated gastronomic events: the International Alba White Truffle Fair.

For several weeks, the town becomes the heart of the truffle world.

But the fair is about much more than buying truffles.

Every edition has its own artistic theme and visual identity, celebrating the deep connection between the people, the land and the traditions that have shaped this region for centuries.

As you walk through Alba, you'll find wine tastings, cooking demonstrations, exhibitions, concerts and cultural events taking place throughout the historic center.

One of the traditions I enjoy most is the Palio degli Asini — the lively donkey race between Alba's historic districts. It's one of those wonderfully Italian celebrations where medieval costumes, music and local pride come together to create an atmosphere that's impossible to describe until you've experienced it yourself.

Another highlight is the World White Truffle Auction, held every November in the magnificent Grinzane Cavour Castle.

Exceptional white truffles are auctioned to Michelin-starred restaurants and collectors from around the world, while guests in different countries join the event live by satellite.

For me, this event is always something special.

I live in the municipality of Grinzane Cavour, and over the years the castle has become much more than one of the region's landmarks. Every time I walk through its gates, I'm reminded how deeply wine, truffles and history are woven together in this extraordinary corner of Piedmont.

One of the things I enjoy most about introducing guests to truffle hunting is watching how quickly their focus changes.

At first, everyone is thinking about the truffle.

A few minutes later, they're completely fascinated by the teamwork between the trifulau and his dog.

You start noticing the little things — the way the hunter watches every movement of the dog, how the dog's excitement grows as it catches a scent, and how naturally they communicate without needing many words.

I also love hearing the stories that truffle hunters share along the way. They explain how weather conditions can influence the search, why some days are more promising than others, how the dog's behavior changes when it picks up a scent, and how years of experience teach them to read the woods in ways most of us never could.

And then comes the moment everyone is waiting for.

The dog suddenly becomes more focused, starts digging, the hunter gently steps in, and for a few seconds everyone is holding their breath.

Whether the treasure hidden beneath the ground is a black truffle or, if you're very lucky, a White Truffle of Alba, the excitement is always real.

To me, that's what makes truffle hunting so memorable.

It's not only about finding a truffle.

It's about sharing an adventure, discovering a tradition that has been preserved for generations, and seeing the Langhe through the eyes of the people who know it best.
